Mushrooms- a Vitamin Bomb!

It really is hard to think what to cook for your family every single day! Sometimes, when I enter my kitchen, I feel like I’m going nuts! Today was one of those days, but I successfully dealt with it :-) I just cooked this delicious lunch for my family today, very light and very tasty, and what’s most important for us who do the cooking- very easy to prepare.

I simply called it mushrooms in wine sauce. It really looks like any similar recipe. I just added few things I like and thought would match perfectly with other ingredients, and the result is… mmmmm :-) I recommend this highly!

Ingredients needed (for 4 serves):

-1 kg of mushrooms (I used white button mushrooms)
-parsley
-2 garlic cloves
-1-2 tbsp caraway (Persian cumin)
-1-2 tbsp oregano
-50g butter
-1 dl dry white wine
-salt, pepper

Method:

Heat butter in the pan on a medium to low temperature. Add crushed garlic, sliced mushrooms, oregano, caraway, and salt and pepper according to your own taste. Do not put too much salt, because it kills the taste of mushrooms and other ingredients, and it is bad for your kidneys, blood pressure, and cellulite! Let it stew for 15 minutes, and then add wine. After that, stew it until the wine evaporates. And when the dish is finished, sprinkle parsley over it, and serve it.

This meal contains only 696 kcal, so you need to serve something with it. I usually go for simply cooked potatoes in a combination with spinach, or some sort of pasta.

mushroomsWhite button mushrooms are excellent for weight loss. They contain only 20kcal per 100g, 3.3g of carbohydrates, 1g of dietary fiber, ONLY 0.3g OF FAT, and 3.1g of proteins. They are full of vitamins and minerals: vitamin C, B1, B2, B3, iron, Pantothenic acid.
