Wonderful Cold Tomato Soup

Today I was feeling like eating a tomato soup, but I wasn’t feeling like cooking. I thought that I’ll have to forget about this soup, but then I remembered this old recipe, of which I heard long, long ago, but never seemed to have tried it. So, I went into my kitchen and after a while- I surprised my family with this delicious meal.

For this soup, you need some fresh vegetables, of course, some spices and some tomato juice. The ingredients for 4 persons are:

  • 2-3 red peppers, ( sometimes, I use yellow and green too, it looks really nice when you have all those colors in your soup),
  • 3-4 ripe, big tomatoes,
  • 1 liter of tomato juice,
  • a cup of chicken stock,
  • 2 cloves of garlic,
  • onions (according to your taste),
  • salt and pepper,
  • 2-3 slices of stale bread,
  • for decoration: 1 green tomato and 1 green pepper.

And, that’s pretty much it!

Preparation method: take big bowl and put in it sliced tomatoes and peppers, add tomato juice and chicken stock, add chopped garlic and onions. Then, use bread and remove crust from it. Crumble the bread into the soup, and then pour it all in your blender, and blend it until you get smooth liquid. Put salt and pepper as much as you like it. I do not use much salt in my food, but pepper I just loooooove! Then, depending on time you have, put it in your fridge and cool it for a while. I left it to cool for about half an hour to 45 minutes and it was awesome! Cool, but not freezing, and it is great during the hot days.cream-tomato-soup-recipe-2

After I took it out of the fridge, I poured it in the bowls and on top of it I added diced tomatoes and peppers, and put a little chopped parsley, and again- pepper :) I suppose it is pretty much obvious that pepper is my favorite spice :) What can I do when I like it! But, the basic recipe doesn’t include this much pepper. They say the soup is delicious without pepper at all! If you try it without pepper, let me know what you think of it.
